Marble Chiffon Cake

A light and fluffy chiffon cake with beautiful chocolate marble swirls. Follow this recipe, you can easily make a perfect chiffon and the marble pattern at home with basic tools!

🥣 Tools you need

  1. Hand mixer
  2. 6-inch round baking pan
  3. Parchment paper/Pan side liner
  4. Mixing bowls
  5. Whisk and Spatula

📝 Ingredients (for a 6-inch round pan)

Chiffon cake

  1. 3 eggs
  2. 30g milk
  3. 30g corn oil
  4. 45g low-gluten flour
  5. 45g sugar
  6. A few drops of lemon juice

Chocolate mixture

  1. 20g milk
  2. 9g cocoa powder

🍳 Step-by-step Instructions 

1. Preheat oven and prepare the chocolate mixture

Preheat the oven to 160°C/320°F, using conventional top and bottom heat.

Combine 20g warm milk and 9g cocoa powder in a small bowl. Mix until smooth and thick, with a chocolate-sauce-like consistency.

Cover with plastic wrap to prevent the surface from drying out while you prepare the cake batter.

2. Prepare the egg yolk batter

Separate the eggs into yolks and whites.

Add the milk and corn oil to a large bowl and whisk until fully emulsified.

Sift in the cake or low-gluten flour and whisk until there are no dry flour pockets. Add the egg yolks and mix until smooth and silky. The batter should fall from the whisk in a smooth, continuous ribbon.

3. Whip the egg whites

Add the lemon juice and granulated sugar to the egg whites. Using a hand mixer or stand mixer, whip on high speed until the egg whites reach stiff peaks.

5. Create the marble batter

Gently fold the whipped egg whites into the egg yolk batter in batches.

Take approximately 50g of the plain batter and mix it into the prepared cocoa mixture until smooth.

Pour the chocolate batter back into the  plain batter.

This is the important part for getting distinct marble swirls: pour the chocolate batter over a wide area of the surface, rather than in one small spot. Then use a spatula or stick to gently fold the batter only 3 or 4 times, making a couple of folds in different directions. Make sure do not mix them completely.

6. Bake

Pour the batter into an ungreased chiffon cake pan and gently tap the pan once or twice on the counter to release large air bubbles.

Bake on the lower-middle rack at 150°C / 300°F for approximately 60 minutes.

If the top is browning too quickly, loosely cover it with aluminum foil partway through baking.

7. Cool completely

Remove the cake from the oven and gently tap the pan once to release excess hot air. Immediately turn the cake upside down and let it cool completely.

Once completely cool, carefully remove the cake from the pan. Slice and enjoy!

💡Tips for beautiful marble pattern🤎

1. Keep the cocoa mixture covered. Once the cocoa paste is prepared, cover it with plastic wrap so it doesn't dry out.

2. Don't overmix the final batter. This is the key to getting marble patterns. When you add the chocolate batter back into the plain batter, spread it over as much of the surface as possible and fold it really gently into different directions for a few times.

  • Why aren't my marble swirls clear?

The most common reason is overmixing after adding the cocoa batter. Once the chocolate batter is added, only fold a few times. Too much mixing will blend the two batters together and make the pattern less visible.

  • Why did my chiffon cake collapse?

Make sure the egg whites are whipped to stiff peaks and that you fold the batter gently to retain as much air as possible. Also, bake the cake fully and cool it upside down.

      • Why use an ungreased chiffon pan?

      Chiffon cake needs to grip the sides of the pan as it rises. Greasing the pan can prevent the batter from climbing properly and may cause the cake to collapse during cooling.

      • Can I use a regular round cake pan?

      A normal round pan is definitely ok. But a chiffon tube pan is even better because the tube in the center provides additional support and helps the cake bake evenly. A regular round pan may require adjustments to the baking time and technique.
